Fugath is a simple and elegant side dish flavoured with curry leaves and coconut. It is very popular in Mangalore and Goa. Whilst this recipe is made primarily with carrot and zucchini, fugaths are sometimes made with bananas, ivy gourd, cabbage and many other vegetables.
