Chicken Burger with home made Sweet Potato Chips

Aussies love their burgers and after coming to Australia I have taken a liking to burgers too. During my lunch hour, I used to que up at a McDonalds just across from a building I worked, aiming at a juicy McDonald McFeast or McChicken burger along with the accompanying crispy fries. I enjoyed the taste of these burgers and I must say, my palate was happy and content after eating this burger. Today I am going to share with you my favourite and delicious Chicken Burger with home made Sweet Potato Chips! Mouthwatering!!!
My son was fond of burgers as a child and even now he eats a burger every so often, as he just loves burgers. This burger used to be a ticket when he came hungry, back from school, for a savoury and a filling snack. I used to just make the patty and apply a lot of tomato ketchup on two slices of bread and put some crispy lettuce leaves in between. He would enjoy this burger sandwich and I was a instantly a happy mum!!
These days it is a different story and the burger I make needs to have fashionable toppings otherwise it won’t win his heart. So, I came up with something that works for him and the rest of us at home. Eat them hot and they are sure to fill you up and keep you satisfied the whole week. After all, burgers are supposed to make you happy and contented right!!!
Over the last few weeks, I have been busy sharing some of my favourite Mumbai pub style recipes with you. So far, I have shared Mumbai pub style chicken chops and kheema fries recipes. This is the third in the series of my favourite pub style recipes and today it is a simple and tasty chicken burger. This burger will revitalise your kitchen and get everyone excited about lunch/dinner as this is a burger you can have for lunch or dinner. It is filling served on its own, but I have added some sweet potato chips with skins on the side for that extra goodness.
The toppings I have suggested are as a guide only. The choice of toppings can vary from person to person and country to country. Sky is the limit where toppings for burgers are concerned therefore use your own favourite toppings if you do not like some of the toppings I have suggested in the recipe.
For this yummy burger, I used Tip Top hamburger rolls that come in a pack of 6. They are large buns and toast well both on the pan and in the oven. You may make your own burger buns at home or buy varieties of bake at home burger buns which also come in packs of 6 in most supermarkets.
Chicken Burger with home made Sweet Potato Chips
Ingredients
For the Burger
- 500 g chicken mince
- 1 egg
- 4 green chillies chopped or to taste optional
- 4 tbsp. coriander leaves chopped
- 1 medium onion finely chopped
- 1 tbsp. ginger finely chopped
- 1 tsp. chilli powder
- 1 tbsp. white pepper powder
- 1¼ tsp. salt or to taste
- 2 cups breadcrumbs plus half cup extra
- ¼ cup heavy cream optional
- Oil for shallow frying
- 4 large burger buns or 6 medium burger buns
- 3 tbsp. butter for the buns
For the barbecue mayonnaise
- ¾ cup mayonnaise
- 2 heaped tbsp. barbecue sauce
- ½ tsp. garlic powder
For the toppings
- 4-6 slices of good quality melting cheese slices
- Barbecue mayonnaise
- Pickles
- Crispy torn lettuce leaves
- Tomato slices of 1-4 tomatoes
- 1-2 medium red onions cut into rounds
For the Sweet Potato Chips
- 1 sweet potato unpeeled (400gm-500gm)
- Oil to drizzle
- 1¼ tsp. salt or to taste
- 2 tsp. freshly ground pepper
Instructions
For the burger
- Line the base of a large baking tray with baking paper. Lightly sprinkle with breadcrumbs.
- In a deep mixing bowl combine the first 11 ingredients.
- Moisten hands with water and divide the mix into 4 portions for large burgers or 6 portions for medium burgers. Shape each portion into 1cm thick patty. Make patties a bit larger than the circumference of the burger bun. Place the patties on the prepared baking tray. If you have round cookie cutters, you may use the largest size round cookie cutter to shape the patties for the larger buns. Refrigerate for 30 minutes for the patties to set.
- Cut the burger buns into half. Apply butter generously on the cut sides of the buns and set aside.
- Shallow fry the patties in a non-stick pan for 4-6 minutes on each side on low to medium heat or until golden brown on the outside and moist inside or until cooked to your liking. Do not overcook the patties. In the last two minutes of cooking the patty, place one cheese slice on top of the patty and cook till cheese has melted. Remove and place on to a baking sheet.
- Toast the cut sides of buns in a shallow pan for 2-3 minutes while the cheese is melting. You may toast on both sides if you prefer it toasted on both sides.
For the barbecue mayonnaise
- Combine mayonnaise with barbecue sauce and garlic powder. Refrigerate until ready to assemble.
For the Sweet Potato Chips
- Preheat oven to 220°C.
- Line the base of another baking tray with baking paper. Spray with oil.
- Slice the sweet potato evenly into 1cm chips and place on an oven tray. Drizzle with oil and season with salt and pepper. Toss well to coat seasoning. Spread the chips in one layer and bake for 20-25 minutes.
- Serve immediately with Chicken Burger and coleslaw.
To assemble
- Spread the cut side of the buns generously with barbecue mayonnaise. Top with pickles, lettuce leaves, tomato slices (only 1 slice per bun if it is large tomato slice or you may need 4 slices if the tomatoes are small), onion rings (skip the onions if you do not like them) and lastly the chicken patty. Top with the toasted bun top.
- Serve immediately on its own or with delicious sweet potato chips. Enjoy!
