Coriander seeds & powder (Dhania)

Coriander Seeds are a popular spice in my kitchen and can be used whole or ground as a powder. I use it in many of my masala bases with cumin, chilli and turmeric. To enhance the flavour, the seeds are dry roasted on a hot frying pan without oil for 3-4 minutes and ground in a dry grinder just before use as it loses flavour quickly. Most of my traditional curries involve dry roasting of coriander seeds which make the curries extremely aromatic. Coriander seeds and powder can be bought in all Indian grocery stores and in many supermarkets.
