A party style Devilled Chicken Slider recipe, where leftover rotisserie chicken is flavoured with green chillies, bell pepper and savoury sauces, before being topped with chilli sauce and creamy aioli for a delicious contrast!

Devilled Chicken Sliders

These Devilled Chicken Sliders are the perfectly spiced savoury bites for the finest brunch, luncheon or dinner made from leftover rotisserie chicken or your favourite Sunday Roast Chicken.

This is a very simple easy recipe that I make in 20 minutes, and I know anyone can pull off.

You will fall in love with these soft golden new style devilled chicken sliders (mini buns), that you have probably never tasted as yet.

Leftover rotisserie shredded chicken is made into a savoury filling by flavouring it with green chillies, onion, bell pepper before giving it a bold spicy kick with Original Chilli Sauce and tomato sauce. This juicy filling is then nestled inside a soft golden bun with a drizzle of creamy aioli and chilli sauce for a delicious contrast.

A zesty Devilled Chicken filling that is just as delicious over toast or on a bed of cous cous, if you could not be bothered to go buy your slider buns.

What are sliders?

A slider is one tasty little burger (about 2 inches in diameter), or one mini hamburger. It is an American delicacy and is a miniature version of a hamburger.

Sliders were first introduced in the US in 1921 by White Castle, the first fast-food hamburger chain. This slider came to be called as The Original Slider in 1921.

The term originated in the 1940s because this was how the US Navy described them, as being so small and extremely greasy they would slide down the throat.

It was around 2007 these mini burgers slid their way into the culinary world.

Unlike today’s fast-food chains that offer a variety of sliders such as chicken, beef, fish and plant-based sliders, the Original Slider was 100% beef, steam grilled on a bed of onions and served on a bun baked in the chain’s bakeries, according to a press release.

What does ‘devilled’ mean?

When I heard the words ‘devilled Eggs’ for the first time, I almost wondered if they had any supernatural association!

Thank goodness they don’t. A little research indicated that ‘devilled’ when associated with food relates to a dry dish made with the addition of hot seasonings or condiments such as, chillies, pepper, tabasco sauce, mustard and the like.

To put it simply, a ‘devilled’ dish is a spicy dish that tickles the palate with a burst of flavours. A dish like this was prepared by the colonial servants to recycle the leftover turkey and chicken roast during the colonial times.

My sliders are called ‘Devilled Chicken Sliders’ because the filling is seasoned with green chillies (a staple in Asian cooking), ABC original chilli sauce (a star ingredient) and tomato sauce which lends the sliders moderately spicy and palate teasing.

This is a filling that brings the flavours together in a whole new way, perfect for adventurous cravers seeking out new flavour experiences.

why use rotisserie chicken?

  • Store-bought leftover rotisserie chicken is the easiest and quickest way to make Devilled Chicken Sliders.
  • Rotisserie chickens are perfectly seasoned and packed with flavour, thus work amazingly for this filling.
  • Rotisserie chickens are slow cooked which means the meat has succulent texture and just the right amount of tenderness.
  • All you have to do when using the leftover rotisserie chicken is to shred the chicken thus saving precious time, energy and electricity of course! On the other hand, if you love roasting a chicken at home, then, by all means, use the leftovers of your Sunday roast chicken.
  • Using rotisserie chicken is most certainly the easy route and the lifeline you are looking for without having to do any major cooking for yourself.

These Devilled Chicken Sliders are thrown together with simple and accessible ingredients with the last of your rotisserie chicken or Sunday roast chicken.

You will need half a shredded rotisserie chicken (310g-320g) and 8-10 mini buns.

The first time I made these sliders; they tasted so good that my taste test team asked them to be added to our snack and meal rotation. They also commented “please do not make any changes to them, as they are delectable just the way they are”!

As the ingredients are so simple, this filling does not need to be a weekend project. It is deliciously doable at any time, be it a weekday lunch (if working from home) or when you get back from work and feel like an uncomplicated dinner.

As a bonus, this filling works well even on your good old toast, with warm roti or on a bed of hot steamed rice!

Here’s what goes into making these unforgettable Devilled Chicken Sliders:

  • Rotisserie Chicken – I prefer to use the leftovers of rotisserie chicken as it is the easiest option to make these sliders. Half a shredded chicken is sufficient to make a filling for 8-10 sliders. The chicken is perfectly seasoned and makes a delicious filling. Add the chicken in the last 5 minutes of cooking to ensure it has warmed up, as we do not want it to dry out by overcooking. Substitute: Leftovers of your Sunday roast chicken, if that’s what you already have!! Scale up: Double all ingredients to make a filling for 16-20 sliders.
  • Green chillies – Thai green chillies add a gentle spicy kick (deseed to lower the spice level). Slice into small rounds to get the most flavour. Decrease or increase chillies to suit your taste!
  • Fresh ginger and garlic – The supporting cast is just as important. Finely chop for fresh savoury flavours. Alternative: 1 tsp. each of ginger and garlic paste – taste will vary slightly with bottled paste.
  • Tomato – Adds a reddish hue along with slight sweetness. Diced or cubed works well.
  • Onion – Diced onion makes a good base to perk up the chicken flavours. I use brown onion but use any you have on hand.
  • Green capsicum (aka green bell pepper) – To introduce a sweet yet savoury addition to this filling. Green works best for this recipe. Add it in the last 5 minutes of cooking to retain some crunch and colour.
  • Condiments – (ABC Original chilli sauce + tomato sauce + white vinegar): For a delightful balance of heat, piquancy, flavour and tanginess. I love ABC Original Chilli Sauce (traditional Indonesian chilli sauce) for this recipe because it gives that unique spicy kick in every bite, followed by a delicate spicy aftertaste, but feel free to use your favourite chilli sauce, if you already have one.
  • Sliders (mini buns) – Not so easy to source. Bakers Delight does not sell them; Woolworths only sells Brioche buns (which you could use for this filling). Find at: Bread Top at Macquarie Centre (unfortunately sold only in packs of 8) next to Bakers Delight (Coles level). They are sold as “dinner rolls with sesame top” Check out Bread Top shops in your local area around Sydney! Alternative: Supermarket or bakery sold dinner rolls, Burger Buns (will make 5-6 burgers with this amount of filling), Potato Burger Buns, Burger Thins, or soft original Thins.
  • Aioli – For a drizzle of finishing garnish and it works well with this filling.

I make these Devilled Chicken Sliders in 20 minutes, as it is a very simple and easy recipe, I know for sure that anyone call pull it off.

This is a Devilled Chicken Slider that is made with a unique Asian fusion combination of ingredients that I have never tasted before, and I am very excited for all of you to dive into this new fusion recipe!

First chop up your herbs, spices and tomato, then heat them in a medium non-stick frying pan or wok over medium heat with some oil, add shredded leftover rotisserie chicken for the last few minutes of cooking along with green pepper, finishing with funky touches of ABC Original Chilli Sauce (a star ingredient) or your favourite chilli sauce and tomato sauce.

A simple, delicious recipe you’ll want to cook again and again, any night of the week, with your leftover rotisserie chicken.

So, gather all your ingredients and let’s get started with my easy Step-by-Step tutorial for the tastiest Devilled Chicken Sliders, that I know you will love!

Recipe Note: This filling can be made a day ahead, as it will taste better when the chicken has absorbed all the flavours.

Important: This filling must be used within 3 days of making.

Chef’s Tip: I served the filling on white toast with a drizzle Sriracha coconut sauce, and it was absolutely delicious. Serve on a bed of cous cous for a terrific lunch or mid-week dinner idea.

Important: To make these Devilled Chicken Sliders, you will need 8-10 sliders (mini buns). Find at: your closest Bread Top bakery because that’s where I buy them! Ask for ‘dinner rolls with sesame top’!

Step 1

First, heat oil in a medium non-stick frying pan or wok over medium heat. Add green chillies, ginger, garlic, tomato and onion and stir-fry for 6-8 minutes.

Step 2

Stir-in chicken and capsicum (green bell pepper)

Add the shredded chicken and capsicum and stir-fry for 3 minutes.

Chef’s tip: Do not overheat chicken as it could dry out if overcooked.

Step 3

Add condiments

Add pepper, chilli sauce (I use ABC original chilli sauce), tomato sauce, vinegar and salt. Stir to combine and cook for 2 minutes for the flavours to meld. Taste and season, if required. Set aside to cool off for 10 minutes or until you get the sliders ready for the assembly. (Recipe Note: you may make this filling a day ahead, warm up in the microwave until just warm and use it over the sliders).

Step 4

Assemble

Split each untoasted slider into half with a serrated knife. Spread each half generously with, original chilli sauce, aioli and tomato sauce. Top with 2-3 tbsp. of the prepared filling. Drizzle with more original chilli sauce (the spicy kick) and aioli. Cover with the lid and gently skewer together with a bamboo pick.

Place on serving platters or boards and serve immediately or at room temperature. Enjoy!!

Important: Not suitable for storing as the filled buns get soggy!

Serve hot or at room temperature?

I prefer to serve these Devilled Chicken Sliders when the filling is warm (not hot as the slider bun could go soggy).

If you want to heat the burger, warm your filled burger for 15 seconds (no more) in your microwave and eat immediately.

Chef’s Tip: There is no need to toast the buns before adding the filling as they are good to serve at room temperature.

Flavour Profile: Each bite is delightfully savoury, with undertones of pepper, green chilli, original chilli sauce, tomato sauce and aioli with flavours and a soft crunch of bell pepper. A favourite on the brunch/game day menu at Deliciously Indian!!!

How to serve devilled chicken sliders

  • I would recommend serving these sliders as a delightful brunch, lunch, snack or dinner, at room temperature alongside hot French fries and sour cream/aioli. Serve them as soon as they are assembled because they will get soggy if left on the bench for more than 10 minutes! No one likes soggy sliders, and I am not an exception!
  • I love this filling with my roti from time to time and it works well with roti. Simply place 3 tbsp. filling in the roti, roll like a spring roll and enjoy! You could drizzle your favourite sauces as accents, if you wish!
  • If sliders (mini buns) are hard to find, then, supermarket sold brioche buns work well.
  • This Devilled Chicken filling is also great on supermarket or bakery sold dinner rolls, Burger Buns (will make 5-6 burgers with this amount of filling), Potato Burger Buns, Burger Thins, or soft original Thins.
  • If all else fails, place 3 tbsp. filling on a good old white toast or your favourite variety of bread with a drizzle of Sriracha Coconut Sauce and enjoy as an open sandwich or cover with another toast and enjoy as a full sandwich!!

Ingredients
  

  • ¼ cup oil pantry staple
  • 3-4 green chillies sliced into small rounds or to taste
  • 1 tbsp. ginger finely minced
  • 1 tbsp. garlic finely minced (12g)
  • 1 medium tomato cubed (140g)
  • 1 medium onion diced (160g)
  • ½ a rotisserie roast chicken shredded (310g-320g)
  • 1 small green capsicum bell pepper, seeded and cut into approx. ¾ inch by ¾ inch diamonds (¾ cup or 150g)
  • 1 level tbsp. coarsely ground pepper or to taste (7g)
  • 2 tbsp. Original Chilli Sauce I use ABC brand - Sambal Asli
  • 2 tbsp. tomato sauce or to taste
  • 1 tbsp. white wine vinegar
  • ½ tsp. Salt (if required) pantry staple
  • 8-10 sliders, unroasted at room temperature
  • Aioli to drizzle I use Heinz Cheesy Garlic Bread Aioli

Instructions
 

  • The filling - Sauté herbs and onion: Heat oil in a medium size non-stick frying pan or wok on medium low heat. Add green chillies, ginger, garlic, tomato and onion and fry for 6-8 minutes.
  • Add chicken and capsicum: Stir in shredded chicken and capsicum and stir-fry for 3 minutes.
  • Add condiments: Add pepper, chilli sauce, tomato sauce, vinegar and salt. Stir to combine and cook for 2 minutes for the flavours to meld. Taste and season, if required. Set aside to cool off for 10 minutes until you get the sliders ready for the filling.
  • Assemble: Split each slider into half with a serrated knife (Note 1). Spread each half generously with original chilli sauce, tomato sauce and aioli. Top with 2-3 tbsp. of the prepared filling.
