Dill Leaves
Fresh dill has an intense flavour and feathery green leaves. Although they resemble fennel they have a distinct flavour. It is used as a culinary herb but in India the leaves are widely used to make dry vegetarian dishes and also added to dhals. The leaves are also used as a garnish for salads, barbeques and pies. It also pairs beautifully with salmon. When cooking dill it is important to remember that overcooking can diminish the flavour.
