Fenugreek is used as an herb either fresh or in the form of dried leaves and the seeds are used as spice. Fenugreek leaves can be directly cooked as fresh leaves to make vegetable dishes. The seeds can be used as a spice and the crushed dried leaves can be used as dried herbs. Fenugreek leaves have a bitter taste. Only fresh leaves are used in cooking and the stems are discarded. I have used dried fenugreek leaves for their rich taste and aroma in my Butter Chicken and Tandoori Chicken.
