Fenugreek Seeds (Methi)
I add a moderate amount of roasted fenugreek seeds in my pickles to make the masala base and when preparing sambhar powders as they give a beautiful pungent flavour. They are also delicious in Sambhar when added to the seasoning ingredients. I also add them when I prepare my Masala Dosa batter for their powerful bitter-sweet taste.
