Garlic

I love fresh garlic and it is an essential ingredient in almost all my curries, soups and snacks. The enticing aroma and flavours of my curries is due to the fact that they are packed with a variety of herbs, spices and other ingredients. I have added garlic to my curries because it boosts the taste and flavours and gives thickness to curries when added to the masala bases. Garlic is added either pulped or chopped along with ginger, green chillies and any spices called for in a recipe for authentic, aromatic curries. I have also added lightly bruised garlic in my Chicken Roast to add that extra flavour to chicken.
