Ham and Mushroom Chilli Pasta

To all my pasta lovers, a long awaited simple and delicious Ham and Mushroom Chilli Pasta recipe if you manage to catch that last packet of Egg Fettuccine at your closest supermarket. If there is more than one packet, please resist the urge to pick more than you need as you will feel selfish and guilty afterwards!
When it comes to pasta and pizzas, the Italians seriously know their stuff and they continue to create some of the world’s treasured treats such as Spaghetti al pomodoro and Pizza Napoletana. The former is prepared with fresh and amazingly tasty sun-ripened tomatoes or tinned peeled tomatoes, fresh basil and some garlic. Interestingly, I have read that the recipe for Pizza Napoletana is protected by the European Union.
It appears Indian people love their pastas and have put their own twist to make pasta preparations very interesting for Indian people to enjoy them and for the visitors from around the world. The last few times I went to India, I noticed that Italian food not only appears on all five-star hotel menus but also on the menus of 3-star and 4-star hotels and restaurants. I was very curious to try some Italian food in India and was pleasantly surprised to find very tasty pasta and other Italian preparations. Yes, in 5-star hotels they hire Italian chefs or Indian chefs trained in Italy for preparing some of those delicious Italian preparations.
This is a delicious example of a tomato-based ham, mushroom and chilli fettuccine pasta recipe that is highly satisfying both for lunch and dinner. I have kept this recipe simple as from time to time I like the main ingredient to shine and in this case the pasta. A long variety of pasta, such as fettuccine is best for this recipe.
Fettuccine is a classic Italian thick, flat and ribbon style pasta in long strands. It is available fresh or dried and is made with wheat flour, salt, eggs and a little water. It also comes in curled nests. Fettuccine is very popular in central and southern Italy.
This recipe is inspired by a few pasta dishes that I have eaten during my travels to India and in Australia, UK and Scotland. I have also had a few requests from people for pasta recipes therefore I have created a pasta recipe that is simple, tasty and can be cooked in 30 minutes. In this recipe, the fresh pasta is cooked in dancing hot salted water until al dente and drained, then added to the hot ham sauce and quickly mixed in with finely chopped parsley. Retain some of that starchy water from the pasta to add to the pasta for a creamier sauce, if that’s what you prefer.
Ham and Mushroom Chilli Pasta
Ingredients
- 1 packet fresh egg fettuccine
- 4 tbsp. olive oil
- 2 cloves garlic chopped
- 1 large onion finely chopped
- 1 medium tomato finely chopped
- 250 g ham coarsely diced
- 300 g mushrooms sliced
- 1 tsp. chilli powder or 2 tsp. chilli flakes or to taste
- 1 tsp. garlic salt or to taste
- 3 tsp. fresh thyme roughly chopped
- ½ cup chopped parsley plus 2 tbsp. extra for garnish
- 2 tbsp. Extra Virgin Olive Oil for garnish
Instructions
- Cook fettuccine according to packet instructions in plenty of salted water. Drain immediately and drizzle with olive oil, separate the ribbons and set aside.
- While the pasta is cooking, to make the sauce, heat oil on medium in a wok and add garlic. Let it sizzle till light brown and then add onion and tomato. Fry for 4 minutes stirring from time to time.
- Add ham and mushrooms and cook till mushrooms are just beginning to soften (about 3 minutes).
- Add chilli powder/chilli flakes, salt, thyme, parsley and mix well.
- Stir through cooked fettuccine into this hot sauce and toss it continuously till pasta warms up. This should take about 2 to 3 minutes. Season to taste. Do not overheat pasta.
- Remove from heat and serve immediately garnished with remaining parsley and a drizzle of extra virgin olive oil. Enjoy!
