Roast Potatoes with Rosemary

A vegetable that adornes the tables of the wealthy and also sustains the poor is the humble yet elegant potato. These Roast Potatoes with Rosemary are really simple to make, filling, healthy, enjoyable and nourishing. They are a perfect side dish with roasts, grilled fish or pot roasts whether you are having a dinner party or family get togethers. Their uses are endless - they can be fried, boiled, roasted, used in stews, added to salads, made into puddings and tarts.

Growing up in India, potatoes were julienned and cooked as a main meal (sabzi) to serve with rice and dhal. They were also dipped into gram flour batter and created into a snack called bhajjeas or fritters. As a teenager, sometimes when I needed a carbohydrate burst, I would simply put a potato into a big pot of cooking rice and enjoy it sprinkled with a little salt and butter. My mother would often add them into curries and stews and these curries have followed me to Australia. Some of the curries that are featured in my book "Deliciously Indian" are good examples where potatoes are used in Indian style cooking.

However, since the time I learnt to roast potatoes this way, they are my most favourite way of cooking potatoes!!

how to make perfect roast potatoes

  • Slice your potatoes evenly into 1 cm rounds so they can roast evenly. Pat dry with paper towel if there is any extra moisture on the potatoes after slicing them.
  • Sprinkle the oil, herbs, spices and salt evenly over the potatoes to distribute the flavours all around. Seasoning the potatoes well makes the difference. It is also important that the potatoes are coated well with oil because the coating is required to actually roast the potato.
  • Toss the potatoes well to coat the oil and the seasoning.
  • Place the potatoes in a large baking tray lined with baking paper in one layer.
  • Roast the potatoes immediately after you coat them with seasoning. Roast the potatoes as per the recipe below.
  • Flipping the potatoes is important to brown them evenly. Do not skip this step.
  • Return the potatoes to the oven and grill them until golden brown in the last 10 minutes for the golden edges.

Ingredients
  

  • 4 large (800-850g) washed white potatoes
  • 125 mL extra-virgin olive oil
  • 5 garlic cloves (20g) finely chopped
  • 2 tbsp. freshly chopped rosemary (7g)
  • tsp. salt (6g) or to taste
  • tsp. chilli flakes or 1½ tsp. freshly ground pepper or to taste

Instructions
 

  • Preheat the oven to 180°C. Line the base of a medium to large baking tray with baking paper.
  • Peel and slice potatoes into 1cm thick rounds and pat dry with paper towel if there is excess moisture. Place in the prepared baking tray.
  • Drizzle with oil, scatter chopped garlic and rosemary. Sprinkle salt and chilli flakes or freshly ground pepper and toss to coat.
  • Arrange potatoes in one layer around the tray. Bake for 35 minutes.
  • Switch the oven to the grill setting. Remove potatoes from oven and gently flip over. Grill for 10-12 minutes for golden potatoes however, if you like your potatoes soft, then bake for the entire 45 minutes only in the oven setting.

    This is so easy to make and pleasing the eyes. The rosemary infused olive oil drizzle adds extra taste to the already delightful potatoes. A staple for us every other sunday.
