Summer Breeze Cooler is a majestic, all weather non-alcoholic 4-ingredient drink. It’s refreshing in summer, hydrating in winter, beneficial in autumn as its packed with essential nutrients and energising in Spring.

Enjoying a drink like this is a celebration of the familiar flavours of my childhood growing up in coastal Karnataka, a state that is dotted with coconut trees.

This innovative fruity infusion is inspired by the fickle Sydney weather (where autumn sometimes feels like summer) and is delicious both served at room temperature and cold.

For someone with a sweet tooth, this Summer Breeze Cooler is a great option for a refreshing mid-morning or afternoon snack. This drink is hydrating and helps sustain energy levels until lunch or dinner time.

A Summer Breeze Cooler like this, is also great for those who are bored with the same old classic coolers! It is an all-day refresher drink, and its unique taste makes it a perfect drink for garden parties and family gatherings.

What does summer breeze cooler taste like

  • It’s light, easy to drink, and delightfully refreshing.

  • It’s ever so delicate to taste and has fruity hues from the refreshing gush of coconut milk and, coconut lychee water.
  • The mild earthy sweetness from honey gives this drink a wonderful accent.

ingredients for Summer Breeze Cooler

This is an easy 4-ingredient Summer Breeze Cooler and is booze-free.

Unlike cocktails, you do not need fancy equipment to make this drink. It is made by blending coconut milk, coconut lychee water, freshly minced ginger and honey, until frothy. I like a frothy finish for this Summer Breeze Cooler and that’s a personal preference.

To create this new coconut lychee blend, I have combined one longtime favourite and one brand new flavour in Australia – Coconut milk and H2Coco coconut lychee water. The result is a smooth coconut milk drink layered with warming ginger, slightly floral tropical lychee and sweet earthy accents from Manuka honey.

Here’s what goes into making this quick and unique Summer Breeze Cooler:

  • Coconut milk powder – A key ingredient for slight creaminess, tropical taste and light sweetness. I have added 75g (1½ sachet) to make 300mL coconut milk. This makes a medium creamy cooler. Ayam is a reliable brand but please use your favourite brand, if you have one. Alternative: Canned coconut milk, provided it is not slimy!! Essentials brand from Woolworths could work!! Also, you may use fresh coconut milk made by blending fresh coconut with water, if you have access to fresh coconuts!!
  • Hot water (not boiling) – Combine 300mL hot water with 75g (1½ sachet) of coconut milk powder for a medium consistency cooler. I think it makes a perfect consistency, as you would not want a thick cooler drink!
  • Coconut and lychee water – Added for that most delicate of fruity hues. Again, I have added 300mL for a medium consistency cooler. Find at: Woolworths placed with their coconut water. Alternative: If you cannot source Coconut and lychee water, then use H2Coco Coconut water, Cocobella or Raw C Pure and Natural coconut water. Please note, you will not have the delicate fruity hues of lychee if you use only the coconut water. It still works! I guess you can also use fresh sweet coconut water, if you have coconuts at home!
  • Freshly minced ginger – A little bit of ginger goes a long way to add an aromatic, zesty and unique flavour profile. I have added 2 teaspoons but feel free to decrease or increase as per taste. Ginger elevates this cooler from ordinary to extraordinary by giving this cooler a mildly spicy and warming sensation. Important: Fresh is best so, why not use fresh?!
  • Honey (good quality) – A star ingredient (Manuka honey) adds a richer, earthier caramel-like sweetness compared to regular honey. It is thicker with a spreadable consistency at room temperature. Find at: Woolworths, Coles or Harris Farm markets. More expensive than regular honey, but fully worth the money! Alternative: Your favourite honey. As regular table honey is sweeter, use as per taste! If in doubt, start with 3 tbsp. and keep adding as per taste.

how to make Summer Breeze Cooler!

This Summer Breeze Cooler comes together with only 4-ingredients (excluding water) and just 15 minutes prep time. You will also need an 800mL capacity blender or similar appliance to make this Summer Breeze Cooler.

Simply place all ingredients into the blender and blend 45-60 seconds or until smooth and frothy.

If you are planning a home party, you can either prepare the cooler before the guests arrive and serve chilled, or you can easily whip it up when they stand around your kitchen bench, so they can enjoy the special experience of seeing you blitz it!

This is a perfect non-alcoholic blend that is guaranteed to hit the spot, if you have friends who love booze-free drinks.

Here’s my easy Step-by-Step tutorial to prepare this Summer Breeze Cooler.

Recipe Note (optional step): The steps below include the steps to use Vac Q vacuum pump. Using this pump is optional and is for the benefit of those who have the Breville commercial blender with the Vac Q vacuum pump but have lost or misplaced the manufacturer’s booklet.

Lucky for me, I have a Breville commercial blender which has an optional attachment called the Vac Q vacuum pump. It is an easy and fun gadget to use, as this vacuum pump draws out air from the blender jug resulting in a smooth textured and richer flavoured cooler.

Important: It is recommended that you use the Vac Q vacuum pump before blending the ingredients.

The full instructions and printable recipe for this Summer Breeze Cooler are in the recipe card below, but here’s a quick run-through:

Chef’s Tip: Make sure you adjust the sweetness and warmth by decreasing or increasing honey and ginger to taste, because when you make this Summer Breeze Cooler, it’s about how it tastes before you pour into glasses!

Flavour Profile: The tropical coconut notes start up front. Then it goes into the honey and ginger flavour and finishes with the soft fruity undertones of lychee from the coconut lychee water.

Important: To make this Summer Breeze Cooler, you will need a blender which will hold 750mL-800mL of liquid!

Step 1

Make the coconut milk

Combine the hot water (not boiling) and coconut milk powder until smooth.

Step 2

blend ingredients (if you do not have vac Q pump)

Place the coconut milk, coconut lychee water, freshly minced ginger and honey (Oops! the honey is on the side) into your blender jug. Blend until well combined and frothy. Taste and adjust sweetness, if required.

Pour into martini glasses from a height of approx. 4 inches, so you can drop some of that froth along with the drink. Sip slowly and enjoy!

Chef’s tip: Use a tablespoon to scoop out some of that lovely steady froth, if it has settled at the bottom of the blender jug and use it as a topper (see Step 9 below).

Step 3

Vac Q vacuum pump (optional step)

If you own a Breville commercial blender with an optional attachment of Vac Q vacuum pump, then follow the manufacturer’s instructions on your booklet.

If you have lost or misplaced the manufacturer’s booklet, as a quick guide, follow the steps below to use the Vac Q Vacuum Pump:

Place all ingredients into the blender. Close the lid firmly (DO NOT BLEND)

Step 4

the pump has two components –

1. The vacuum pump 2. The inner cap with vacuum valve.

For ease of use, I am posting images of the components of the vacuum pump and also parts of my Breville blender (without the ingredients).

For the purpose of this exercise, I have not placed any cooler ingredients into the blender, except in Step 9. The steps below simply demonstrate how to use the Breville Vac Q vacuum pump. Please watch the video above to see how I make this Summer Breeze Cooler using the Vac Q vacuum pump.

Step 5

replace the inner cap of the blender

Replace the inner cap of the blender lid with the inner cap with vacuum valve.

Step 6

place the vacuum pump on top

Place the vacuum pump on top of the inner cap with vacuum valve.

Press the power button in the centre of the vacuum pump to turn on the vacuum pump. A white LED ring will be visible around the Power Button when the vacuum pump is in operation. The vacuum pump will automatically stop once vacuum pressure is reached (takes approx. 2 minutes).

Step 7

remove the vacuum pump and blend

Remove the vacuum pump from the lid. Blend the mixture for 45-60 seconds or until smooth and frothy on top. Taste and adjust sweetness, if required. If you add more honey, please blend again for a further few seconds or until honey is well incorporated into the mixture.

Step 8

press the vacuum valve to release pressure

Important: Press the vacuum valve (see image on the right below) to release vacuum pressure from the blender jug. Open the inner lid with vacuum valve.

pour and enjoy!

Pour into wine glasses from a height of approx. 4 inches, so some of that steady froth can drop along and enjoy!

As you can see from the images below, the top is frothy and the drink at the bottom is smooth without any bubbles. Love this look on my Summer Breeze Cooler!!!

Serve chilled or at room temperature?

This Summer Breeze Cooler can be served at room temperature or chilled. It’s a personal preference! I would not recommend adding ice before serving, as it will dilute the cooler and alter the final taste!

Chef’s Tip: Refrigerate leftovers and use within 24 hours. Please stir any leftovers before serving to redistribute all the delicious flavours!

WARNING: It is a manufacturer’s recommendation to always blend only after applying vacuum. Do not blend any ingredients while the vacuum pump is operating, as this could cause damage to the pump!

How to serve Summer Breeze Cooler

Unlike cocktails, this Summer Breeze Cooler does not demand any adornments. The resulting pale grey colour cooler looks sensational just the way it is in clear wine glasses. However, if you want to add a final frivolous flourish, you may use parasols or swizzle sticks or a fresh lychee, if in season.

The recipe yields enough to serve 3-4 people in medium size narrow stem wine glasses. You may scale up the recipe easily to serve 6-8 people, in which case, you will have to double quantities of all ingredients.

You may serve straight from the blender or serve chilled in chilled glasses. Always serve in clear glasses so that you can see the elixir you are consuming.

  • Serve all day in medium tall, narrow wine glasses chilled or at room temperature.
  • Serve them in clear, unbreakable glasses for kids, as it’s sweet enough to be enjoyed by kids.
  • My favourite way of serving, is to pour my Summer Breeze Cooler about ¾ of the way up, in different shape and size wine glasses with a stem, such as martini glasses, margarita glasses or cocktail glasses. The stem allows me to hold the glass without warming the cooler with body heat. An optional garnish of fresh lychee (if in season) positioned carefully on the rim of the glass just before serving, elevates the aesthetics.

Ingredients
  

  • 300 mL (1¼ cups) hot water (not boiling)
  • 75 g (1½ sachet) coconut milk powder (Note 1)
  • 300 mL (1¼ cups) coconut and lychee water, chilled (I use H2coco) (Note 2)
  • 2 - 2½ tsp. (17-20g) freshly minced ginger or to taste
  • 3 tbsp. (80mL - 90mL) (approx.) Manuka honey or to taste (Note 3)

Instructions
 

  • Make coconut milk – Combine hot water (not boiling) with coconut milk powder until smooth. Set aside for 5 minutes to cool slightly.
  • Blend ingredients - Place all ingredients in an 800mL capacity blender and blend until well combined and frothy (45 - 60 seconds).
  • Vac Q (Optional step) (Note 4) – If you have the Breville blender with a Vac Q vacuum pump, then follow Steps 3 to 9 in the "Step-By-Step" instructions above.
  • Serve and enjoy - Pour in medium tall chilled clear martini, margarita or cocktail glasses. Sip and enjoy! Serve at room temperature or chilled, if preferred.

Notes

  1. Please use coconut milk made with fresh coconut, if you have access to fresh coconuts. If not, combine 75g of good quality coconut milk powder (Ayam works well) with hot water (not boiling) and cool it for 5 minutes.
  2. If you cannot source coconut lychee water, please use fresh sweet coconut water or Pure Natural Coconut Water from a carton (I use Cocobella or Raw C).
  3. If you have runny honey in your pantry, please use as per taste. Runny honey is usually sweeter than Manuka honey. Important:  A word of warning, although Manuka honey is generally safe for consumption, people with diabetes should consult their doctor before using Manuka honey in their diet.  
  4. “Breville Vac Q” is an optional vacuum pump attachment that I purchased with my Breville Super Q commercial blender. When I make my coolers, milkshakes, dips and spreads, I use this attachment to remove air from my blender jug, before blending. Removing air results in richer flavoured and smoother textured coolers.
