Sweet and Sour Prawns is a sublime recipe that will have you reminiscing over holidays spent in Mumbai, Mangalore or Goa where freshly caught prawns are cooked and taste unbelievably good.

The flavour of prawns shines in this simple gravy which is made up of tomato sauce and a few aromatic spices. This quick curry takes less than half an hour to cook and is a recipe of the simplest kind. Serve with steamed rice for a tasty mid-week meal or serve with appams or pan polay to mop up the delicious sauce for a perfect weekend dinner.

Ingredients
  

  • 1 kg green prawns peeled and deveined
  • 2 potatoes peeled and diced 250g
  • 4 tbsp. oil
  • 1 medium onion sliced
  • 200 g tomato sauce
  • 2 tsp. fresh ginger
  • ¼ tsp. yellow mustard powder
  • 1 tsp. pepper powder
  • 2 tsp. chilli powder or to taste
  • ½ tsp. ground cloves
  • ¼ tsp. ground mace
  • ½ tsp. ground cardamom
  • 2 cups chicken stock
  • ½ tsp. chilli flakes optional
  • ½ cup freshly chopped coriander leaves
  • 1 sprig extra coriander leaves for garnish

Instructions
 

  • While the prawns are being peeled, cook potatoes in boiling water till al dente. Drain and set aside.
  • Heat a deep saucepan with oil. Add onions and fry for 4 minutes. Add tomato sauce, ginger and all ground spices. Stir to combine.
  • Add stock and chilli flakes. Stir well and bring to boil. Simmer for 2 minutes or till the gravy is slightly thickened. Add potatoes and stir.
  • Stir in prawns and cook till pink or just cooked. Remove from heat and stir in coriander leaves.
  • Serve garnished with torn coriander leaves with simple boiled rice, appams or pan polay (Neer Dosa).
